The ultimate indulgence of baked Brie with almonds offers a perfect contrast between gooey, creamy cheese & crunchy, nutty almonds to create one irresistible, molten morsel.

Baked Brie with Almonds 
Serves: 2-4 | Prep: 5m | Cook: 10-12m

Ingredients:
1 (4 oz.) Brie cheese
1/4 cup slivered almonds
1/4 cup butter
1 loaf french bread

Method:
Preheat oven to 350°. In small frying pan, melt butter. Add almonds & saute over medium-low heat for 3-5 min. Be careful to not let it burn. Place cheese in serving dish & put in oven for 10 min. Cube bread, toasting briefly in oven if desired. Pour almond & butter mixture over cheese. Serve immediately.



With an enticing contrast of a tender, earthy base paired with an incredible range of possible savory, cheesy, & crunchy fillings, stuffed mushrooms are always a crowd pleaser.
Savory Stuffed Mushrooms 
Serves: 6-12 | Prep: 15-20m | Cook: 20-25m

Ingredients:
24 medium portabello mushrooms
2 cloves garlic, minced
1 cup bread crumbs 
1/2 cup grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
2 tbsp. chopped parsley
8 tbsp. butter

Method:
Remove stems from caps & chop fine. Saute with garlic in 4 tbsp. butter. Add bread crumbs, cheese, salt, pepper, & parsley. Saute caps briefly in 3 tbsp. butter. Fill caps with stuffing & place in a low greased casserole. Melt remaining butter & drizzle over tops. Bake until very hot at 350° for 15 min. 



These moist, tasty zucchini squares wrapped in a golden crust serve as an excellent make-ahead & versatile appetizer, that tastes delicious warm or cold.
Zucchini Herb Squares 
Serves: 10-12 | Prep: 15m | Cook: 25-35m

Ingredients:
3 cups thinly sliced zucchini, unpeeled
4 eggs
1/2 cup oil
1 cup all-purpose baking mix
1/2 cup chopped onion
2 tbsp. chopped parsley
1/2 cup grated Parmesan cheese
1/2 tsp. chopped garlic
1/2 tsp. salt
Dash of oregano & pepper

Method:
Mix together oil & eggs. Add remaining ingredients & mix all together. Bake at 350° in greased 11x9x2 pan until edges are faintly brown.  Cut into squares. 



With a captivating blend of smoky, savory sausage nestled in a perfectly crisp, flaky pastry shell chourico tarts deliver a burst of bold flavor that is both rustic & undeniably satisfying.
Smoky Chourico Tarts 
Serves: 8 | Prep: 25-30m | Cook: 8-10m

Ingredients:
1 (16.3 oz.) can refrigerated biscuits
1/2 lb. ground Chourico sausage
1/2 green pepper, chopped
1/2 onion, chopped

Method:
Cook Chourico until half done, about 10-15 min. Andouille can be substituted. Add green pepper & onion, cooking another 5 -10 min., until done. While sausage is cooking, separate biscuits & flatten. Use rolling pin or smooth glass. Drain & allow sausage to cool a little when it's done. Place 1 tablespoon of mixture on each round. Pull up opposite sides & seal, then pull up remaining 2 sides & seal. Bake as directed on biscuit can, about 8-10 min.



The velvety texture, bold flavor, & versatile nature of cheddar dip makes it perfect for elevating everything from tortilla chips to pretzels & vegetables into a yummy snack.
Sharp Cheddar Dip 
Serves: 8-10 | Prep: 10m | Yield: 2-3c

Ingredients:
1 1/2 cup dairy sour cream
1 cup (4 oz.) shredded cheddar cheese
1/4 cup chopped onion
3 tbsp. chopped green pepper
1/4  tsp. salt
1/8 tsp. red pepper sauce
1-2 tbsp. milk

Method:
Beat all ingredients together. If needed, add more milk for desired consistency. Cover & refrigerate for at least 1 hour.  Stir before serving. Serve with your favorite dippers. 



Often enhanced with sesame seeds, garlic, or a sweet & spicy mayo, shrimp toast offers a rich, flavorful profile that is both easy to make & universally liked.
Golden Shrimp Toast 
Serves: 6-12 | Prep: 10-15m | Cook: 10-15m

Ingredients:
6 English muffins
1 can baby shrimp
1 stick butter, softened
1 jar cheddar cheese spread
1/2 tsp. garlic powder
1/2 cup mayonnaise

Method:
Split each muffin in half. Mix remaining ingredients together by hand until it forms a smooth pastry spread. Spread over muffin halves. Broil for 2-4 min. or until muffins appear lightly toasted. Cut into smaller pieces if desired.

🍳 Savor the Fundamentals


If your cooking skills are limited but you have always dreamed of whipping up something more interesting, it's never too late to improve your cooking skills. I have always been big on improvising & experimenting, so I typically throw together items I already have on hand. My learning curve has always been in techniques & adding spices. Because meals were often 'not by the book' things didn't always turn out as expected. I always asked my family for feedback of how it could have been better. Most times it became an often requested favorite.

Feeding ourselves is necessary but it needn't be stressful or something we dread. Let's quickly review basic cooking techniques & meal planning pointers. Go over some easy tips to get anyone slicing & dicing with ease.


Mastering Basic Cooking Techniques 

Recipes are often full of terminology that may be unfamiliar to some, yet at the heart of most recipes are some basic cooking methods. When one becomes familiar with & practices them, they realize many recipes aren't as complicated as they might appear. The key is to start smaller/easier & keep practicing. 

Boiling is heating water until it bubbles vigorously. 

Poaching is often for cooking eggs, fish or vegetables in gently simmering water (beginning to bubble but not yet boil). 

Steaming is for cooking food over, but not in, boiling or simmering water.

Sauteing refers to cooking food in a skillet or saute pan quickly over high or medium high heat, usually in heated oil or butter.

Braising is cooking food in a small amount of liquid, such as water or broth, for a long period of time. This results in particularly succulent meat.

Stewing is cooking food (usually meat & vegetables) in liquid flavored with herbs, broth & sometimes wine until it's absorbed, creating a delectable thicker than soup concoction.

Roasting involves cooking food in an uncovered pan in the oven for a long period of time. Usually used to describe cooking vegetables or large pieces of meat, such as a pot roast or turkey.

Grilling is cooking on a grate over hot charcoal, gas or electric.

 

Stock Up On These Pantry Staples

The payoff of keeping items stocked, with only enough perishables one can eat in a week, is that you can whip up satisfying meals on short notice. Below are checklists of pantry basics that can be incorporated into your meal plans.

Assorted breads or buns, assorted oils & vinegars, canned or dried beans, cold & hot cereals, garlic & onions, various pastas, potatoes, roasted peppers, spices, canned tomatoes,  dried grains, wines (dry white or red are good for adding to sauces).

Condiments: Dijon mustard, ketchup, mayonnaise, salad dressing, salsa, soy sauce, hot sauce, worcestershire sauce.

Refrigerator & freezer goods: Cream cheese, cottage cheese, eggs, chicken breasts, tilapia filets, hard & semi-hard cheeses, milk, pizza dough, produce, sour cream, sweet unsalted butter.



Planning Your Menu

Having a shopping list ensures that everything needed for your meals before you start cooking. It needn't be time consuming or burdensome, especially when trying out new recipes or cooking techniques. Simply make sure you have all the necessary ingredients & equipment to finish the process. Practice mastering a Dagwood sandwich for fun maybe.. 

But choose something less complicated like a soup, appetizer or dessert. Look for copycat recipes you enjoy from well-known chain restaurants. Make something you normally eat from a box. Consider serving the proteins your family enjoys but try experimenting with different cooking techniques. 


Thinking Like a Chef

Professionals provide the best advice & they say it's not that complicated. These look like common sense & things you would actually acquire over time anyway out of habit.

Get to know herbs - both fresh & dried - so you can season without relying on a recipe.

Plan your menus in advance. Think about contrasting flavors, textures & colors. Keep courses balanced. If you serve a complex appetizer, serve a simple entree or one that only needs reheating.

Be thrifty. Avoid wasting anything usable for soups, stocks, salads, etc. Almost everything can be frozen for later use.

Know the basic techniques. Cooking is so much more fun & successful when you approach it with confidence.

Use the freshest ingredients possible & buy only in season fresh vegetables & fruit. Seasonal produce offers the highest quality & supply, at the lowest price. Let what's fresh & available at the market help you decide what to make.

Prepare ingredients before you start cooking. Get the chopping, deboning & washing chores out of the way in order to create an even, efficient flow of cooking steps.

Don't be a slave to recipes. Use a good, basic recipe that you like as a starting point, but don't consider it written in stone. With experience & good technique, & by discovering how ingredients work together, you can simply glance at a recipe & make adjustments to suit your taste.

Most importantly, have fun! Take a cooking course, buy yourself a cookbook, or make a new dish that you have always wanted to try. It's a great time to get creative, especially with friends or family helping with simple tasks.

Includes cooking plates to make up to seven hard, medium, or soft boiled eggs or to poach or make an omelet. Includes a combo measuring cup/egg piercer.
Was looking for an easier, more versatile way to enjoy hardboiled eggs without a lot of preparation. Also enjoy deviled eggs but didn't want to make a large amount. I was impressed with the design & multitude of features.

Measuring cup is the only thing needing improvement. Piercing needle is smart but it's cap could easily be lost. The (essential) markings of the exact amount of water (for how long the unit will heat up) is rubbing off.

Would buy again or give as a gift.

🎭 Montecristo ~ Not Just a Sandwich

In 'The Storm' Edmond Dantès, the protagonist in Alexandre Dumas’ 1844 novel, The Count of Montecristo, says: 

“Life is a storm, my young friend. You will bask in the sunlight one moment, be shattered on the rocks the next. What makes you a man is what you do when that storm comes.” 

Edmond Dantès’ character, an inveterate bon vivant, whose false imprisonment strips him of his dignity, his lover, & his wealth. Despite what he loses, his passion for life is never extinguished. Dantès’ longing for his lover, Mercedes, combined with his desire for revenge on Fernand Mondego (his childhood best friend) & his entourage, fuels his escape & eventual triumph. Fantastic read as the masterful Dumas highlights its intricate plot, deep themes, & rich characters.

The 'Secret': Just as the main character in 'The Count of Monte Cristo' hides his true identity, the sandwich's name hides its basic ingredients & simple preparation.

French Roots: The 'Monte Cristo' is an American interpretation of the French 'croque monsieur', which literally translates to 'crunchy mister' or 'Mr. Crunchy'. The Monte Cristo adds ingredients like turkey & dips the sandwich in egg batter before frying, similar to French toast.
